Our Omakase menu is interpreted with artisanal caught fish from the pacific coast as well as local products that create a unique Colombian Japanese fusion concept. Our 8-seat bar is designed like a sushi bar in Tokyo, allowing the menu to be prepared in front of our guests, creating a fun and dynamic dining experience.
Inspired by traditional Asian dishes and preparations, Sushi Bar & Moshi are concepts that allow Colombian ingredients to shine and find a special connection with this continent, creating new flavor profiles that are surprisingly delicious. Offering maki, baos, ramen, nigiri and other creative preparations, Colombian flavors mingle with those of Japan, Vietnam, Malaysia and Thailand.
Travelling throughout Asia, we fell in love with dishes from Japan and southwest Asia and started to connect a variety of fruits, other ingredients and flavors with Colombia. There are no traditional sushi restaurants in our country, so we wanted our sushi menu to avoid cream cheese and fried rolls, focusing on using fresh artisanal caught fish from our Colombian coasts. We do not use any imported or large-scale commercially caught fish, and incorporate ingredients that represent the culinary identity of our country.

Dani loves being on the line, particularly cooking fish and seafood. Fermented preparations like meads, kombuchas and vinegars are a large part of her inspiration for creating new dishes. She loves to learn, teach, share information, and is constantly motivated by being part of the Carmen Restaurant Family.
